In Venice, a bacaro is a workingman's pub: a small, dark canteen where snacks called cichetti are passed over the bar and wine comes in a small glass the locals call an ombra. Some bacari have grown elegant over the years, but the best of them keep the joy of their simple origins. That is the spirit we cook in.
Cichetti, sharing plates and campari drinks, served the way a Venetian bacaro would: simply and generously. Come for a glass of wine and a bowl of olives, or settle in for a proper meal.
We are a Liverpool story. Jonathan Poole and Paddy Smith opened Salt House Tapas in July 2010, serving Spanish small plates, then Hanover Street Social in August 2011 with a modern brasserie menu. Bacaro followed in 2014 with Venetian small plates, and later came Bouchon, a classic French bistro on the corner of Castle Street.
Drinks are half the point of a bacaro. We pour wine the Venetian way, alongside campari drinks and coffee, and you are welcome to come in just to drink: no food required, though a bowl of olives rarely goes amiss.
These days Jonathan and Paddy put everything into Bacaro alone. They believe unforgettable dining comes from good food and the care with which it is served, so the kitchen keeps pushing for creativity and consistency, and the room keeps making the kind of small moments that bring people back.

Guests keep saying the small plates are anything but small: generous portions, dishes cooked with real flavour, and genuine value for the money.
The staff come up again and again: warm, friendly and quick to help with the menu, whether the table is a date, a group of friends or the kids.
People love the room itself: lovely character, a great atmosphere, a bar that is a pleasure to look at, and firm plans to come back.
